Dip the sirloin slices in the white flour, then in the whisked eggs and breadcrumbs. Fry in oil and butter and add salt. Place them in a buttered baking tray, cover with slices of ham and abundant fontina PDO (2-3 slices). Add curls of butter and bake in a hot oven for 5 minutes. Serve hot with potatoes or other cooked legumes.
